Let’s take conveyors for instance – they tend to collect dirt, due to spillages of the products processed – while storage tanks and vessels are subject to the build-up of deposits and encrustations from the product processed in the plant. Typically, the beverage equipment sanitation procedure is to use hot water and caustic chemicals to clean and sanitize resulting in large amounts of water usage and potentially beverage tainting chemical residue.

Due to the small particulate size of the water molecules (.0006 microns) the dry steam vapor is able to penetrate every nook and cranny of the equipment and the heat transfer, especially to stainless steel is immediate, as opposed to hot water baths.
