Plus, they help water reduction. “Lautering time is the absolute king here,” says Gilliland in the video above. “So making sure that we have the right amount of enzyme and the right enzyme in there. Making sure we can keep that lauter time and the whole lauter cycle as short a time as possible so we can get that throughput through the brewhouse.”
Prost Brewing leans on IFF for better cycle times and clarity
