Cahoots Brewing announced a brewing agreement with Big Chicago Brewing Co. to produce its first batch of beer this fall. This announcement marks the end of a long-awaited launch for Cahoots Brewing, which officially launched in January after two years of planning.
“I’m looking forward to finally launching the brewery and am thrilled to be working with Big Chicago and their brewers,” said Dustin Adkison, founder of Cahoots Brewing. “I want our brewery to give beer lovers like me a chance to be a part of the brewing experience.”
No S’more Stout, an imperial stout brewed with scotched-soaked vanilla beans, will be brewed in September and released to the Chicago market in November. Cahoots also plans to release a barrel-aged version of the stout in bottles by the end of the year.
Cahoots Brewing has the philosophy that anyone can be a part of the brewing process. The brewery has engaged its fan-base on Twitter and in its blog for active involvement in the decision-making process. One example is the selection of the Cahoots Brewing logo. The brewery held a logo contest and polled fans for votes.
“The winning logo was actually not my favorite,” Adkison said. “But if Cahoots Brewing is going to live up to its name, we have to give the people what they want.”
Big Chicago Brewing Co., established in 2012 and based in Zion, Ill., is solely a production and packaging facility serving the craft beer industry through contract brewing and private label brewing services. They currently produce beers for the Chicago market and several surrounding states.
