Today’s cool collab: Karl Strauss and Cowboy Star create Steakhouse Stout Beef Jerky

July 22, 2019Keith Gribbins

Let’s float them in front of a wall.

Beer and beef jerky. These are the two main foundations of my food pyramid. So, it pleases me greatly to hear that Karl Strauss Brewing Co. has teamed up with the Cowboy Star Restaurant and Butcher Shop to create a beer-infused piece of jerked meat that I can both stuff in my big mouth-hole immediately or keep and store in my apocalypse bunker.

The Cowboy Star Restaurant and Butcher Shop is a fancy restaurant in San Diego, and C-Star Provisions is its partner. According to the ever-reliable Jerky Reviews:

C-Star Provisions is a new beef jerky brand that launched with a Kickstarter campaign back in August of 2018. They’ve since started selling online through their website.

The name, “C-Star” stems from Cowboy Star, the famous steakhouse in San Diego’s East Village. It’s actually a collaboration between the restaurant and an investment group. Cowboy Star had been offering this jerky to diners for the past year. When a group of investors had dropped by for dinner, they sampled the jerky and knew there was potential for a business deal.

C Star Provisions says there is nothing like the Stout Beef Jerky on the market, noting that there are other beer jerkies on the market. Karl Strauss’ Wreck Alley Imperial Stout is the brewski used, and it’s brewed with darkly kilned malts, cocoa nibs and Columbian coffee beans from fellow San Diego native Bird Rock Coffee Roasters. It’s delish. Its rich layers of dark chocolate, toffee and espresso-like roast should pair well with meat treats, and C Star Provisions notes it’s using only the best American Angus beef (yum).

C Star Provisions Steakhouse Stout Beef Jerky will be available for purchase in 3-oz bags at shopcstar.com.
