If you’re looking to further your education in the art and/or science of brewing, start your search with the UC Davis Continuing and Professional Education program’s spring semester. Taught by world-renowned brewing experts, these courses are fully online and can be taken from anywhere in the world. Here’s what you’ll find this spring.

Beer Recipe Development and Scaling: From Small to Large

February 25; $75. In this course taught by Dan Weber, Assistant Brewing Manager at Dogfish Head Craft Brewed Ales, you’ll learn how to create great beer recipes from one of the best in the business. Through live, online lecture and hands-on calculation and recipe scaling demonstrations, Weber will bring his professional experience to the virtual classroom as he teaches students his methods for designing recipes that achieve a desired color, body and flavor profile that can be repeated and scaled with consistency.

Beer Quality: Flavor

April 5-June 27; $299. In this course, you’ll learn at your own pace how to control and improve the flavor of beer. Through a series of engaging and informative lectures, you will learn how beer flavor is detected, created and assessed. By the end of this course, you will have gained practical knowledge on how to achieve the desired flavor and aroma in your brews. Students who successfully complete this course will earn a digital badge, demonstrating their proficiency and advanced education in the subject area. The skill-level digital badge represents a mastery of how to control and improve the flavor of beer.

Beer Quality: Foam

April 5-June 27; $299. Discover the science behind foam, including how to measure and assess it, in order to achieve that perfect head of foam on your beer. By the end of this course, you will be able to apply your new knowledge to ensure excellent foam performance on your beers. Students who successfully complete this course will earn a digital badge, demonstrating their proficiency and advanced education in the subject area. The skill-level digital badge represents a mastery of foam and its scientific relationship and performance in a quality beer.
